lime & coconut cake on a sunny day

Wellness Pods’ signature lime & coconut cake is a zesty, crumbly, light, downright delicious treat to enjoy on a sunny day. Oh and not to mention, it’s easy peasy!

Best enjoyed with a friend by your side and a cup of tea on the other. Tastes fantaslicious paired with a chai & coconut milk tea… (If you are after a caffeine-free variety, try Red Rooibos Chai by Mayde Tea).


 

Ingredients

Cake

  • 1 1/2 cups of spelt flour
  • 1/2 cup shredded coconut
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon Himalayan salt
  • 1/2 cup raw honey (try this one)
  • 2 tablespoons of coconut oil
  • 1/4 cup lime juice (freshly squeezed is best)
  • 1 tablespoon of lime zest
  • 1 cup coconut milk

Coconut lime cream

  • 270ml coconut cream
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon raw honey
  • 1 teaspoon lime zest

Candied coconut lime (optional- if you have a load of limes and time)

  • 2 limes, sliced
  • 3 cups water
  • 2 tablespoons honey
  • 1/4 cup shredded coconut

Easy peasy lemon squeezy. It’s prep time!

Method

Cake

  1. Preheat oven to 180 degrees
  2. Mix flour, shredded coconut, baking soda and salt in a large bowl and set this aside
  3. In a separate bowl, combine the honey, lime zest, lime juice and coconut oil
  4. In an alternate fashion, add the coconut milk and honey/lime mix to the dry mix
  5. Mix the batter until well combined, with no lumps
  6. Grease a 12inch by 6inch baking tin and line with baking paper
  7. Bake for 30-35 minutes, until golden brown. Check with skewer to ensure it is cooked through
  8. Cool in tin for 10 minutes before carefully flipping onto a cooling rack

Coconut, lime cream

  1. Combine chilled coconut cream, vanilla, lime zest and honey into a large bowl
  2. Beat on high until thickened
  3. Serve with cake

Candied coconut lime (optional- if you have a load of limes like me)

  1. Boil 3 cups of water in a saucepan
  2. Add sliced lime to boiling water and bring to simmer
  3. Simmer for 15 minutes
  4. Remove limes from water and reduce liquid content to approx 2 cups
  5. Add 2 tablespoons of honey and stir until dissolved
  6. Re-add limes to water and simmer for 20 minutes
  7. Transfer limes onto wire rack covered in baking paper
  8. Sprinkle with shredded coconut
